Recipe // Pancakes with Fruit

These pancakes are the easiest recipe, so easy my kids can make them and they are their favourite start to the day or after school snack. Make them plain or add your favourite fruits for a little extra fun. 



Prep time: 5 mins

Cook time: 15 mins

Makes 8-10 small pancakes


Ingredients:

  • 2 cups of self-raising flour
  • 2 cups of milk
  • 2 eggs
  • 1 handful of blueberries
  • 1 banana thinly sliced
  • 1 pear thinly sliced
  • butter or oil for greasing
  • maple syrup for serving

Method:

  1. Combine flour, milk and eggs into a mixing bowl.
  2. Whisk together until smooth. 
  3. Heat a medium flat fry pan on medium heat. 
  4. Use a teaspoon of butter to melt and grease the pan.
  5. Add about a ladle full of batter to the pan, if using fruit, place on top of the batter.
  6. Once bubbles start to form on the surface of the batter, flip the pancake to cook the top. Allow to cook for a couple of minutes.
  7. Set aside the pancake and cook the remaining batter in this way.
  8. Serve with extra fruit and maple syrup or toppings of your choice.
